When it comes to brewing espresso, it is common practice to tamp the portafilter by pressing it against a countertop's edge using an espresso tamper. However, this method often leads to human error in the form of irregular compression, resulting in channeling.

Channeling occurs when the compression of the coffee grounds is unevenly distributed throughout the filter. As a result, water finds the path of least resistance instead of flowing evenly through the entire bed of grounds. This leads to improperly saturated grounds and poorly brewed espresso, resulting in a bitter taste that is unpleasant.
